A contemporary style of barley spirit from Bristol distillery Circumstance. This spirit keeps with Circumstance's house style of long fermentations and short ageing to produce vibrant, full flavoured spirits. As this is yet to reach 3yrs in oak it cannot be classed as whisky, however, the quality of these small batch releases are truely exceptional. Made from 5 types of British barley: malted, raw, smoked, brown and chocolate. It was fermented for 13 days on a bed of French saison yeast and distilled through a whisky hood and a 4 plate column. It was ageing for eleven months on a combination of charred oak spindles and first-fill bourbon casks. The result is complex with flavours of agave syrup, burnt milk chocolate, creamy porridge followed by an intreging coastal hint.
