Sheestown 1.2 is the second release from the distillation of the first barley harvest from Sheestown and under goes a longer maturation than the 1.1 bottling. It also has a slightly different cask composition, which adds a fruity, honey note to the flavour; 33% first-fill American oak, 19% virgin American oak, 25% premium French oak and 23% were previously used to age vin doux naturel (fortified wines). A golden appearance with oils that grip the glass. Honey and malty on the nose with pears, orange peel and sherry. Gentle spices and clove warm the palate with blood orange, honeycomb and ginger.A long finish with gentle spice and citrus that tingles the tongue.
