Distilled from our 2011, 2012 and 2013 barley harvests, consisting of publican barley variety, then matured in 29 bourbon barrels and 6 oloroso sherry butts for a minimum of 8 years. On the nose elegant, sweet peat smoke, followed by waves of citrus and honey, finishing with notes of vanilla and salted caramel. On the palate a Bourbon-driven 100% Islay brings an initial malt-driven profile followed by green fruits; apple and pear.  Light spice, raisin and toffee are present towards the finish.
