Georgian Bath was one of the most fashionable resorts in 18th century England, frequented by the likes of Jane Austen, Charles Dickens and Beau Nash. Attending glamorous galas, balls and dances at the world famous Assembly Rooms, they would have enjoyed the most popular drink of the times: the Syllabub.
The Syllabub goes back to the 16th century in England. The recipe and serve (as well as the spelling of its name) has continued to evolve over the past 500 years, but historical sources agree on a base of fortified wine with spices and a cream topping served in decorative glassware.
Shake 70ml of the Syllabub with 50 ml of double cream in a tin with ice, strain and serve in your fanciest of glassware with a sprinkle of nutmeg. The drink will naturally settle into a layered drink. For a shorter richer flavour, serve directly over ice with an orange twist.
