Initially matured in Oloroso Sherry Hogsheads, these 250ltr American Oak hogsheads were filled with a mixed mash bill Single Pot Still distillate which included 100% Irish malted barley, unmalted barley, oats and rye. The whisky then goes for a final maturation in PX sherry casks from a 60yr old solara, thick to the bone with gorgeous PX syrupy wine with some of the casks being chestnut. A sweet and savoury palate with a wonderful mixture of honey syrup, fine dark chocolate, crispy bacon and cracked white pepper.
