This rich and robust rum from Guyana’s Diamond distillery was finished in a Palo Cortado sherry quarter cask at Unit 9, located in the Royal Elizabeth Yard just outside Edinburgh. Acquired in 2021 by Holyrood distillery as a whisky warehouse, the old Royal Navy ration dispensary and storage is once again been used for rum. Only 222btls exist.

This rum was distilled on one of the only wooden pot stills in the world and is full of rich stone fruits, charred vanilla oak, toasted coconut, banana and dark chocolate.
