The first ever release of the Thornæs Organic Single Malt is a single cask of only 314btls. 54 btls landed in the UK. This whisky started its life in small 50 litres Danish oak barrels. After 12-13 months of intense flavouring from the new oak, it has been moved to a 250 litre Bourbon Hogshead to achieve a milder and longer maturation before being bottled in October 2023. Lots of toffee and warm spices, but also good complexity with notes of pepper and mild tobacco. Subsequently, the large 250 liter hogshead Bourbon cask has added additional notes of vanilla and caramel.
