Whole grape clusters were placed in unlined clay amphora, and sealed to jump start carbonic maceration – think fizzy n’ lush juiciness! ‘Pure Imagination’ also went through malolactic fermentation, for a smooth & pearly, matcha cream dream.  Fermented using non-selected, wild, yeast with 32 days of skin contact. Matured 6 months in the oak and clay vessels, 2 months stainless steel. Bottled without fining or filtration. Vegan friendly and bone dry.
