This 34-year-old whisky, distilled in 1991 at North British distillery in the heart of Edinburgh  is a wonderful example of older grain whiskies. Demerara sugar and rich custard up front, backed by a playful sweetness reminiscent of fruit jellies. A coating layer of honeycomb wax leads the way, followed by stewed plums and a touch of floral plum jam. The wood-driven character carries through from the nose, adding grip and complexity. The texture is satisfyingly oily, allowing the flavours to linger.
