The second release from Ballykilcavan was distilled from barley grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co.Laois. His fertile fields are sheltered by ancient woodland on some of the best soil in the region to grow malting barley. Formaturation 55% of the casks were first-fill American oak, 22% were premium French oak and 22.5% were previously used to age vindoux naturel (fortifiedwines). The second release is almost four months older than the first. A yellow gold appearance with heavy oils. Red grapes on the nose with tilled earth and dried fruit. An initial oily mouthfeel with white pepper, apricots, spices and toffee. Adry oily finish with spice, chocolate, malt that lasts.
